Air fryer eggplant surprised me at my aunt's place Saturday

Drove out to my aunt's in Fresno for a family thing. She pulled out these little eggplant slices crisped up in her air fryer. No breading, just olive oil and smoked paprika. They had this chewy, meaty texture that blew my mind. I thought eggplant was just for mushy parmesan. She said it took her 4 tries to get the timing right at 375 for 12 minutes. I tried them with a drizzle of honey and it was unreal. Anyone else had a veggie that turned out way better in the air fryer than the oven?
