I finally tried making chicken wings in my air fryer instead of deep frying them

Went over to my buddy's place in Austin on Saturday and he made buffalo wings in his air fryer that were just as crispy as fried ones, so how do you get that same crunch without drying the meat out?

Wait, did he brine them or toss them in cornstarch before air frying? Curious if he did anything special to keep them from drying out while still getting that crunch.

Two weeks ago I saw a guy at the grocery store spend five minutes picking out avocados... squeezing every single one, checking the stems, holding them up to the light. Then he just tossed them in a bag and walked away like it was nothing. It's funny how we'll obsess over the small stuff like chicken prep or avocado ripeness, but then completely zone out on the bigger picture. Like, nobody's gonna remember if those wings were perfectly crunchy or if that avocado was slightly too soft. We just want to eat and move on with our day. But I guess that's just how people are wired, we latch onto these tiny details to feel in control of something.
