Preheating the air fryer with nothing in it actually makes wings way crispier
Been making wings in my air fryer for like a year now and they always turned out okay but not great. Last week I was running late and turned it on to preheat while I was still drying the wings off. Forgot to put them in for like 5 extra minutes. When I finally tossed them in at 400 they came out the crispiest I've ever had. Tried it again on purpose yesterday with drumsticks and same thing. Anyone else just throw stuff in cold or do you actually preheat?

Start preheating and then just stand there staring at the empty basket for five minutes like some kind of weirdo. My wife walked in on me doing that yesterday and asked if I was okay. Told her I was unlocking the crispy potential of the chicken. She rolled her eyes so hard I think she pulled a muscle. But honestly it works. The initial blast of heat seals the outside before the inside even knows what hit it. Now I just tell people I'm meditating on the fryer while I wait.

and honestly you might be onto something bigger here. I started doing this after reading a serious eats article about how preheating creates that initial blast of heat that sears the outside fast before the inside even has time to think about drying out. the air fryer is basically a convection oven so the same rules apply. now I always give it a full 5 minute preheat empty, then open it up and spray a little oil on the basket before I drop the wings in. the difference is night and day. I also do this for frozen fries now too and they come out way less soggy in the middle.
