That cornstarch trick on fries actually works but here's the catch
I tried tossing frozen fries in a little cornstarch before air frying at 400F and they came out way crispier than ever before. But if you don't shake off the excess it turns into a powdery mess - has anyone else dealt with that?

Yeah the bag shake method is the move. Same here @milaw14, go by feel now.

Used to roll my eyes at people adding cornstarch to everything, but tried it on some grocery store crinkle cuts last night and yeah, it's a game changer for sure. The key was putting the fries in a bag with the cornstarch and shaking until just lightly coated instead of dumping it all on at once. Did you find a specific ratio that works best or just go by feel?

Honestly I just go by feel too, usually about a tablespoon per pound of fries. Made the mistake of using too much once and ended up with this weird gummy coating that was like eating paste. The bag shake method is key though, I toss em around for like 10-15 seconds until you can barely see the powder anymore. Then I let them sit on a paper towel for five minutes before frying so the starch really sticks. One thing nobody tells you is to double fry em at 325 then 375, the cornstarch crunch with that two-step fry is next level.
