Sharpen that knife to a razor edge and practice on scrap cable first. You need to roll the cable under the blade, not slice straight in. Mess up the angle and you'll cut straight through the insulation on the inner conductors. It's a skill that takes time to get right, and you'll still nick a few wires while learning. Honestly, that's why most people just buy a decent pair of strippers.
