A customer at the Portland farmers market asked for a sourdough with 'more character'

I was selling my usual loaves last Saturday when a woman named Elara picked one up, looked at the crust, and said, 'It's nice, but I want one that tells a story, you know? More bubbles, a darker bake.' It made me realize I'd been playing it safe to make every loaf look the same. Has anyone else had a request that made you change your bake on purpose?
