My grandma used to add a splash of warm water to her dough and it made it flaky but not like what you're describing. I tried a recipe once that called for sour cream instead and that was a whole different ballgame. But vinegar in pie dough sounds weird, I've only ever used it in pickling or cleaning my coffee pot. Now I'm curious though, does it make the crust taste sour at all or is it just for texture? I might have to test this out next weekend when I make my apple pie.

totally feel you on that, vinegar in dough sounds wild but i swear you can't taste it at all
