Had a total disaster with a wedding cake order last Friday

I was doing a three tier vanilla cake for a wedding in Portland and my buttercream split right as I was about to start the final coat. The whole kitchen was 80 degrees and I was rushing. My partner looked at the mess and just said, 'start over with cold butter, it's okay.' I had to remake the frosting and the cake was two hours late, but the bride was super nice about it. Has anyone else had a frosting meltdown in hot weather and how do you fix it fast?

Stick the whole bowl in the freezer for ten minutes then whip it again. Cold butter is the only fix when it gets that hot.

My buttercream once split so badly it looked like I was making soup. A quick freezer trip and some cold butter saved the day, but I still get nervous when the weather heats up.

Yeah, that "looked like soup" stage is the worst. I've had to do the freezer trick so many times I just keep a couple of butter sticks chilling in there all summer now.
