Had to pick between cake flour and all purpose for my birthday cake last week
I was making my wife's birthday cake and ran out of cake flour halfway through. Had to make a call between driving 20 minutes to the store or just using all purpose from the pantry. I went with the all purpose and added 2 tablespoons of cornstarch per cup like I read somewhere online. The cake came out a little denser than usual but honestly nobody at the party noticed or cared. Still turned out better than I expected. Any of you ever had to make that swap in a pinch and regret it or did it work out fine?

Totally worked for me with cornstarch, nobody knew the difference.

And that's the thing @craig.mila, people get so stuck on using the "right" thing when half the time a quick fix like that works just as well if nobody's looking too close. It's like how we all pretend to have our life together but really we're just figuring it out as we go.
