Hit 500 perfect sourdough loaves last Saturday and it messed with my head

I marked 500 loaves out of my home oven (I keep a tally on my fridge) and realized I'd been overthinking hydration percentages for the first 200 or so. Anyone else have a number that made them rethink their whole process?

500 deadlifts once. I kept a tally on my whiteboard for a year. Around 200 I was obsessing over wedge angles and bar path. Realized around 350 that grip strength and just pulling the bar off the floor faster solved most of my problems. Stopped overthinking everything after that. Your sourdough thing sounds exactly the same - sometimes the basics are where the real gains are.

Same thing happened to me with bench press. Spent months messing with elbow angles and arch heights, then realized I just needed to eat more and press harder. Funny how we turn simple stuff into rocket science when the basics were right there all along.

Huh, I heard that 1000 hours in anything makes you an expert, guess you're halfway there.
