My coworker told me I was overmixing my cookie dough after I complained about them being flat.
She said 'You're developing too much gluten' and now I stop mixing as soon as the flour disappears, and my cookies actually puff up instead of spreading into pancakes - has anyone else had their dough consistency totally change from one small tweak?

Nah resting it actually relaxes the gluten so it spreads more not less.

Wait, isn't it actually letting the dough rest that helps with spreading?

Wait, wouldn't resting the dough just make it MORE firm and harder to spread? I always thought you had to work with it right away before the gluten tightens up.
