My great aunt in Albuquerque swore I should proof my rye dough twice, and she was dead wrong
She insisted a second proof at 80F for 90 minutes would give me a taller loaf, but it flattened out and the crumb went gummy on all three tries. Anyone else have a relative whose baking tips backfire, or is it just me?
