My sourdough starter took 14 days to finally double in size
Switched from tap water to filtered water on day 10 and it doubled within 4 days. Anyone else notice a big difference from water quality?

Oh boy, yes, water quality can make a huge difference. I had the same problem for weeks until I switched to bottled spring water and my starter took off almost overnight. The chlorine in tap water really does seem to slow things down.

Oh wow, that's interesting because I actually had the Opposite problem with my starter. I tried bottled water for a week and it barely bubbled, but the moment I switched back to plain tap water it got super active again. Must be something about different mineral contents in different water sources or something.
