Guess my oven is a proofing box too, then. It runs hot and so do I.

You run hot" is a perfect description, @mila_campbell25, my oven does the same thing and I swear it has a mind of its own. I see what you did there with the proofing box comment, that's a clever way to spin a quirk into a feature. Ovens that run hot are a pain for most baking, but you're right, they can totally double as a proofing box if you're careful. I've learned to just crack the door open a smidge when I'm proofing bread, otherwise it overproofs in half the time. Do you use the oven light for extra heat or just the pilot light?
