Why I stopped ignoring my starter's float test
I had a batch of sourdough turn out flat and dense three times in a row. Kept thinking my timing was off or the kitchen was too cold. Finally dropped a spoonful of starter in water before mixing the fourth batch and watched it sink like a rock. Took that as a sign to feed it twice a day instead of once and my next loaf had actual oven spring. Has anyone else had their starter lie to them for weeks like that?

It's like the universe has a script for these moments. First your sourdough starter flakes out, then you notice your phone battery draining at 1% per minute for no reason, and suddenly you're questioning every other trust you've placed in the world. There's this whole quiet collapse of reliability that happens in little chunks. Kind of makes you wonder what else is just coasting on borrowed time.
