Blown away that bread flour can double as cake flour if you sift it 5 times

I was reading an old baking forum thread from like 2015 and someone mentioned sifting bread flour multiple times to mimic cake flour for a sponge cake. I tried it last Sunday with a birthday cake for my sister and honestly did not expect it to work. I sifted it 5 times on a piece of parchment and the texture came out way lighter than my usual all purpose. Maybe it's just my kitchen scale or something but has anyone else tried this trick? Does it only work for certain recipes or am I going to ruin a genoise next time?

Funny how the internet teaches us kitchen hacks nobody's grandma ever needed. Guess we all just overcomplicate things until someone tries the dumb version and it works.
