Hit 12 straight good loaves and I sat down on the kitchen floor
Back when I started baking in my little apartment in Des Moines around 2019, I bet I tossed 30 bricks into the trash before anything came out edible. Last Saturday I pulled loaf number 12 in a row that actually rose right and had a crust my neighbor Deb asked about, and I just sat on the floor staring at the cooling rack. Funny thing is nothing fancy changed, I just stopped rushing the proof and started using the same cheap scale for flour and water. For the folks who bake a lot, what was the loaf count when you finally felt like you had it figured out?
