I finally had to pick between a recipe's exact oven temp and what my gut said

The recipe for my lemon bars said to bake at 350F for 45 minutes. My oven runs hot, so my gut said to drop it to 325F and check early. I went with my gut and pulled them at 35 minutes. They came out perfectly set with no burnt edges, just a slight golden crust. Has anyone else had to ignore a recipe's instructions because you know your own oven better?

Totally get that. My old oven was like that, it would incinerate anything at the listed temp. I learned to always set a timer for way less time and just keep checking.

My friend's oven is a total wild card, it burns everything. She tried a new cookie recipe that said 375 for ten minutes. She knew that was a death sentence in her kitchen, so she dropped it to 325 and watched them like a hawk. They came out soft and chewy instead of charcoal briquettes. She said trusting the recipe would have been a total disaster.

Used to believe recipes were law until my own oven started lying about its temperature. A cheap oven thermometer showed it was running almost fifty degrees hot. Now I check the actual temp before anything goes in.
