I just realized my cookies were flat because I was using warm butter for years.

My grandma's old recipe card literally says "cold butter" in all caps. I never knew why until I took a food science class. Warm butter melts too fast in the oven, so the dough spreads before it sets. That's why you get a thin, greasy puddle instead of a thick cookie. Keeping it cold creates steam pockets for lift. Changed my whole baking game.

Ever wonder if your oven's temperature is lying to you? I had flat cookies for months even with cold butter. Turns out my old oven ran 25 degrees cold. The butter would just melt before anything could set. Got an oven thermometer and it was a total game changer. Cold butter needs the right heat to work its magic.
