Just realized I've baked 41 loaves of bread since July and loaf 40 was the first one my kid asked for seconds on
I started keeping a tally on the fridge with a dry erase marker back in July, mostly to see if I was actually getting better or just wasting flour. Numbers 1 through 12 were bricks, honestly, I think I underproofed all of them because my kitchen in Tucson runs about 68 degrees. Somewhere around loaf 20 I quit checking the clock and started poking the dough with my finger like the old guys on YouTube do. Loaf 40 came out last Sunday and my 9 year old, who usually scrapes the crust off and leaves it on the plate, ate two slices plain and asked if there was more. I almost took a picture of his plate instead of the bread. Now I'm scared to change anything in case I jinx it. Anybody else keep a dumb tally like this, and did it actually tell you anything useful?
41 loaves is serious work. The tally already told you something big: poke test beats the clock in a cold kitchen. Loaf 40 just proved it. Don't change a thing now, write down the exact room temp and proof time so future you doesn't forget. Kid asking for seconds is the only score that matters anyway.
