Just realized my cake disaster came down to a choice between two flours
I was making a birthday cake for my kid and ran out of my usual cake flour. I had to pick between all purpose flour or a gluten free blend I keep for my sister. I went with the all purpose, thinking it would be fine. Big mistake. The cake came out super dense, like a brick, and only rose about half an inch. My kid said it looked like a pancake. Has anyone else had a flour swap go this wrong? What's the best sub if you're in a pinch?

That sounds like a baking disaster waiting to happen. Protein powder cooks totally different than regular flour. Hope they learned their lesson after that one.

Watched my roommate try to make protein powder pancakes last year. The whole batch turned into these weird, rubbery discs that stuck to the pan. We had to basically chisel them off with a spatula. The kitchen smelled like burnt chemicals for days. What's the worst baking swap you've ever seen someone try?
