My attempt at a mirror glaze cake looked like a crime scene
I was in my kitchen in Phoenix, trying to pour a smooth pink glaze over a chilled cake. It instantly seized up and cracked into a thousand pieces, looking less like a dessert and more like a shattered bathroom tile. Has anyone else had a glaze just completely rebel on them?

Shattered bathroom tile is such a perfect way to put it, that's brutal. Susan649 might be onto something with the heat, but man, Phoenix in the summer is its own beast, my kitchen feels like a sauna. I tried a mirror glaze once and it just slid right off the cake in a sad, lumpy puddle, total disaster lol.

Wait, could it be more about the cake temp than the room? I've had mirror glaze work in a hot kitchen but only when the cake was frozen solid. If the cake itself is even a little warm, that glaze just runs off like water. Susan649 is right about heat mattering, but maybe it's the cake's heat, not the air. My friend in Florida ices her cakes in the fridge for an hour before she even tries to glaze.
