My aunt swore by room temperature eggs, so I used cold ones anyway

She told me last Thanksgiving that cold eggs ruin the structure of a butter cake, but I figured it was an old wives tale so I grabbed them straight from the fridge. The cake came out dense and flat, and now I'm stuck with a whole pan of doorstop slices. Anybody else learn a rule the hard way after ignoring advice from a family member?

Toss those dense slices in some trifle and @emma_dixon70 nailed it, cold eggs wreck the whole process.

Idk if this is totally right, but maybe cold eggs can mess up the butter and sugar creaming part too? I've heard room temp stuff helps everything mix together smoother, not just the structure thing. Your aunt might've been onto something with that old wives tale.

That whole "room temp everything" rule is a good example of how taking a little extra time upfront saves headaches later. I've noticed the same kind of thing with other stuff too, like if you rush a paint job, you always end up having to fix drips or uneven spots. So yeah @emma_dixon70, your aunt probably was right about that old trick making things a whole lot easier for you.
