My mother's one criticism fixed my pie crust for good
Last Thanksgiving my mom watched me roll out dough and said my wrist was tense, like I was mad at the flour. She made me loosen my grip and let the rolling pin do the work, and the crust came out flaky instead of tough for the first time in 8 years. I always thought it was about cold butter or resting time, but it was just my death grip on the pin. Has anyone else had a tiny physical tweak completely change their bake?

My late mother in law, Ruth, taught me the same thing about kneading bread. She told me I was punching the dough like it owed me money and to just use my fingertips with a light touch. First time I did it, the loaf came out with a much softer crumb, which I thought was magic. Now I catch myself telling my own daughter the same thing every time she makes biscuits.
