My neighbor's sourdough always collapses and I think I know why

I keep seeing people treat their starter like a pet that needs constant feeding, but letting it get too acidic is the real issue. Mine thrives on a 1:1:1 ratio, fed once a week and kept cold, and it's never failed me. What's your starter maintenance routine look like?

Totally agree, that weekly fridge feed is the way to go. I used to stress about daily feedings and my starter was always sluggish. Now it's super predictable and rises like a champ every time.

Oh man, same here, my starter was a total diva until I switched to weekly feeds too!

Weekly feeds are great for low maintenance, but you still need to feed it daily for a few days before you bake with it to get it really active.
