Serious question, did anyone know a single packet of yeast is only good for about 4 cups of flour?
So I've been baking bread on and off for maybe two years now, and last week I actually sat down and read the back of the yeast packet for the first time instead of just tossing it in. It says right there that one 7 gram packet works for about 4 cups of flour, and I had been dumping one packet into a 6 cup recipe for months wondering why my loaves came out flat and dense. I found this out from the little Fleischmann's packet in my own drawer, which felt pretty dumb since it was sitting there the whole time. My last three loaves before this were basically bricks and I blamed the oven, the humidity, my starter, everything except the yeast amount. Since I started measuring it out proper, the rise has been way better, like noticeably taller in the pan after an hour. Your mileage may vary depending on the recipe and how old your yeast is, but it was a real face palm moment for me. Has anyone else been shorting their dough on yeast without realizing it, or am I the only one who never read the packet?
