Skip the $14 gluten free flour blend at the store, I did the math and it is a ripoff
I baked three loaves this month with a $14 bag of Bob's Red Mill gluten free all purpose flour and all three came out like bricks, plus the bag only makes two loaves. Turns out you can mix your own from rice flour, potato starch, and xanthan gum for about $4 a batch, and my fourth try finally rose right. I wasted $28 before I figured that out and I am still mad about it. Has anyone else ditched the store blends, and did your own mix actually work or did I just get lucky on loaf four?
