The first loaf I baked in 2017 vs. last week's loaf is like a completely different food

I finally stopped guessing on water temperature and bought a cheap thermometer, and now my bread actually rises instead of turning into a brick, so why did I fight that for 6 years?

Oh man, I used to be all about the "just wing it and see what happens" method with water temperature, thinking it didn't really make that big of a difference. But after a few too many sad, flat loaves I finally caved and bought a thermometer too, and honestly it's like night and day for my crumb structure now. Your mileage may vary but I'm totally sold on how much that one cheap tool can level up a bake.

wait wait - you went SIX YEARS without checking water temp? @phoenixb34 I feel your pain on that one but man I don't think I could've held out that long before giving in.

Ngl, that thermometer thing is real but you're off on the six year timeline - the original poster said they were fighting it for six years, not that they went that long without checking water temp. They got the cheap thermometer and now their bread actually works.
