Unpopular opinion: greasing the pan with butter made my banana bread worse, and I finally figured out why
Last Saturday I baked two loaves side by side in my mom's kitchen in Toledo, one in a buttered pan and one on parchment, and the buttered one glued itself to the bottom so badly I had to chisel it out with a spatula while the parchment loaf slid right out, so now I'm wondering if anyone else has given up on greasing altogether or if I just used way too much.
