Update: my sourdough starter went from liquid to lifting a lid in 5 days
Two Sundays ago my starter was watery and smelled like nail polish, then I left it on the counter near the oven in my Dallas apartment and fed it twice a day. By Friday it doubled in 6 hours and pushed the lid off a jar so hard it hit the floor. Is the nail polish smell a sign I should toss it, or does that go away once it gets going?
That nail polish smell is just the starter being hungry and making alcohol, which is normal this early on. Once it starts doubling fast like yours is doing, the good yeast takes over and the smell fades into something more like yogurt or sour beer within a week or two. Keep feeding it twice a day and don't toss it, rising that hard in 6 hours means yours is a fighter lol.
