Went to a local bakery that bragged about their sourdough, found out they use commercial yeast.
Called them out on it and the owner just shrugged, so has anyone else run into fancy bakeries faking the ferment?

Honestly, I wouldn't get too worked up over it. A lot of bakeries use a mix of commercial yeast and starter to speed things up, it's pretty common. Your mileage may vary, but I'm not sure it's worth the drama unless the bread is bad.

I mean, idk, I get what you're saying but it kind of feels like people are acting like it's the end of the world or something. Like, sure, it's not "pure" sourdough if they're cutting corners with commercial yeast, but is it really that deep? Maybe it's just me but I feel like unless the bread tastes like cardboard or something, who cares how they got there. People need to chill a little, it's just bread at the end of the day.

Huh, so you're saying it's basically just a shortcut? But then what's the point of calling it sourdough if it's not actually fermented the long way?
