Why does nobody talk about how long it takes to fix a broken buttercream?

I was making a birthday cake yesterday and my Swiss meringue buttercream split into a greasy, curdled mess. I spent almost an hour and a half trying to save it, warming the bowl and whisking in more butter bit by bit. Has anyone else had a frosting rescue take way longer than the recipe said it would?

My cousin had a buttercream disaster that took two hours to fix, even with the warm towel trick. She kept adding tiny bits of cold butter like @lindal13 mentioned, and it just sat there looking sad in the bowl forever. The recipe made it sound like a five minute fix, but it totally ruined her whole baking schedule.

Oh man, "greasy, curdled mess" is the perfect way to put it. My friend Sarah had the same nightmare with her Italian meringue buttercream last month. She was on the phone with me for over an hour, practically in tears, while she tried to slowly bring it back with a hair dryer and more mixing. The recipe said it would take 10 minutes to fix but her whole night was gone. It really does feel like those rescue steps never account for how stubborn a broken frosting can be.
