Just read that 1 in 4 home bakers has ruined a cake by using old baking powder
Found that stat in a King Arthur Flour survey from last summer and it totally explains my last three birthday cake disasters. Anyone else been burned by a can of baking powder that's been sitting in the cupboard too long?

Why would anyone follow the date on a pantry item that clearly still puffs when you test it?

oh man i gotta hard disagree with @jordanblack here. That date is there for a reason even if the thing puffs up. Botulism doesnt care about your puff test and thats no joke with canned goods. Had a buddy eat some beans that looked fine and ended up in the hospital for days. Puffing just means bacteria made gas inside but not all of them make you sick right away. Some stuff like low-acid cans can hold pathogens that dont change the smell or texture at all. Why gamble your guts over a can of soup thats a few months past?
