Customer said my knife handles felt like broomsticks. He was right.

Last month at a market in Austin, this older guy picks up my chef knife and goes 'this blade is great but the handle feels like a broomstick, no offense.' I was annoyed at first, but then I gripped it again. I realized I'd been shaping handles for how they look in photos, not for how they feel in a wet hand after 20 minutes of chopping. So I changed my whole grip profile, added more taper near the bolster and a slight palm swell, and tested it on 12 different hand sizes. Now I'm getting compliments from actual cooks, not just guys who hang blades on the wall. Anyone else get humbled by a customer's blunt comment and actually improve their work because of it?

Bought a cheap set of kitchen shears years ago that kept jamming on chicken bones. I had a customer tell me they felt like a toy, and honestly, they were right. I took them apart, filed down the pivot, and reshaped the handles so they fit my hand better. Now I sell a version of that same fix and it outsells everything else. Sometimes the bluntest feedback is the best tool you get.
