Glue pot exploded on my kitchen table, now I'm on team PVA vs paste

I was rebinding a family cookbook in my apartment in Columbus last Tuesday and my homemade wheat paste went bad mid-application. It turned into this slimy mess that dripped all over the signatures and left the spine looking like a jellyfish casualty. I had to strip the whole text block and start over with PVA, which honestly worked way smoother and dried in an hour. But part of me feels like paste gives that authentic 18th century feel, so which do you all swear by for regular case bindings?
