Appreciation post: the $1.50 rotisserie chicken rice pot my old roommate in Dallas showed me
My old roommate in Dallas used to make this one pot thing every Sunday that fed us for four days and I finally asked him for the recipe last week. Turns out it was just a $1.50 rotisserie chicken from the grocery store off Haskell, a cup of rice, a can of salsa, and whatever veggies were about to go bad in the drawer. He'd pull the meat, toss the bones in a pot with water for 20 minutes, and use that broth instead of buying stock. Total cost came out to like $4 for the whole thing and it honestly beat most of what I order out. I ran the numbers on my own grocery run and I was spending $9 to $12 on the same amount of food before this. Has anyone else built a whole week of dinners around one of those cheap cooked chickens, and what do you throw in yours?
