Frozen veggies are cheaper but taste like cardboard unless you roast them on high heat, finally figured that out after 3 soggy stir-fry attempts

Last Tuesday I threw a bag of frozen mixed peppers and onions onto a sheet pan at 425 for 20 minutes instead of microwaving them like my mom always did, and they actually caramelized, so now I'm wondering how many other cheap ingredients I've been wrecking with low heat, anyone else have a similar kitchen lightbulb moment?

Man, I had the exact same thing with frozen broccoli! I used to steam it on the stove and it came out like mush, then I tried tossing it in oil and salt and hitting it with high heat, total game changer. Now I roast almost everything frozen before I even think about the microwave. It took me way too long to figure out that high heat fixes what low heat ruins.
