I finally found a use for those sad wilting carrots in my fridge
I always thought you had to toss limp veggies, but last month I tried chopping up some old carrots and celery into a soup with canned tomatoes and spices... turned out better than fresh stuff for a fraction of the cost. It stretched into 4 meals for under $3 total. Anybody else got a go-to meal for produce that's past its prime?

My mom always told me to throw out any veggie that went soft, so I pretty much followed that rule for years. Then last winter I had some floppy bell peppers and a half bag of spinach that was starting to get slimy, and I threw them in a pan with eggs and cheese for a scramble. Changed my whole mind about wasting food. Now I keep a bag in the freezer for stuff like that, chop it up and add it to chili or pasta sauce. Hard to beat free flavor from stuff you were gonna toss anyway.
