Rant: my $1.29 bag of rice from Aldi turned into a gluey mess on the stove
Tried to stretch my grocery money last Tuesday in Columbus and dumped the rice in before the water even boiled, so I ended up scraping a sticky blob off my only pot while my roommate watched. What am I doing wrong with the rinse step, do you soak it first or just give up and buy the microwave pouches?
Waiting for the water to boil is not really the issue here. The real problem is the rinsing and the heat. Cheap rice has a lot of loose starch on it, so you have to rinse it in cold water until the water runs clear, usually three or four changes, and that alone fixes most of the glue problem. Then bring it to a boil uncovered, turn it way down, put the lid on, and leave it alone for about 15 minutes. Do not stir it while it cooks, that just makes it worse. Soaking is optional, it saves maybe five minutes but is not the thing that fixes sticky rice.
