Shoutout to the guy at the Portland farmers market who convinced me to buy a whole 10lb bag of ugly potatoes for $3
I was broke and needed to stretch $20 for a week, so I roasted them all with oil and salt on Sunday, and having those pre-cooked spuds in the fridge meant I could throw together a cheap hash, soup, or breakfast bowl in under 10 minutes every night.

Mixing boiled and roasted is the real hack. The tessa is onto something with that method split. Having both textures ready to go makes every meal feel less like you are just eating leftovers. That ten pound bag turns into a whole toolkit.

So we're all just out here running potato test kitchens in our ovens now? Next you'll tell me you're weighing the starch content and keeping a spreadsheet. I'm over here just trying not to burn the frozen pizza.

Okay, but roasting them ALL at once is the real pro move. I'd just add that boiling some of them first is a game changer. Boiled ones get super creamy in soup, and the roasted ones stay crispy for hash. Mixing the methods saved my week before.
