That stone ground flour marked me down 3 hours on Tuesday, the bag lied about cook time

I picked up a $2 bag at a discount market and my usual 20 minute tortilla recipe took 3 hours of soaking and kneading before they stopped tasting like cardboard. Has anyone else had bargain flour that just refuses to behave?

Honestly that sounds like the flour doing exactly what it should, cheap stone ground stuff has way more bran and germ left in it so it drinks up liquid like crazy. You gotta plan for that, not fight it, soak it overnight or add way more water than the regular recipe calls for. The bag probably said "stone ground" and you just assumed it would behave like the bleached all purpose stuff, that's on you not the flour. I've bought twenty dollar bags from fancy mills that need just as much babysitting, so a two dollar one giving you trouble is basically a steal. If you want instant gratification go get some enriched flour and stop complaining about a product that actually tastes like wheat.
