TIL a $1.50 bag of wilted greens can come back to life

Last month I was at the Saturday market in Greensboro and this older woman was picking through the discount bin of spinach and kale. I made a comment about how she was brave to buy stuff that looked so sad. She laughed and said 'wilted just means thirsty, not dead' and showed me her trick. She puts the greens in a bowl of cold water for 20 minutes before cooking them, and they perk right back up. That same bag of veggies cost me $1.50 instead of the $4 for the fresh bunches. I tried it at home and honestly it worked way better than I expected. Do any of you do the revive trick with other veggies, like carrots or celery? I'm trying to stretch my produce budget further this month...

Wait, has anyone actually tried this with celery? My buddy swears by the same trick but he cuts the bottom off and stands the stalks in a glass of water overnight. He told me he got these super sad looking celery bunches at the discount rack for like 50 cents and they came back crunchy the next day. He said the leaves perked up too, not just the stalks. I tried his method with some carrots that went a bit floppy and they did get firmer, but not like brand new or anything. The greens thing totally works though, I do that almost every week now with my spinach. Still skeptical about reviving stuff like broccoli or cauliflower, those seem like they just get mushy.
