That kombucha I gagged on ended up being a daily habit

I bought a bottle from a lady at the farmers market in Austin just to be nice. She swore it would fix my digestion issues. I took one sip and almost spit it out, tasted like fermented feet. But I paid $6 for it so I forced myself to finish it over three days. By day three I actually wanted another sip. Now I brew my own in the closet and drink a glass every morning. Has anyone else had a gross first taste turn into a full obsession?

Kept my first batch behind the fridge, @grant.felix. Fermentation funk faded once it settled.

Hold up, you brew it in your CLOSET? Like, your clothes closet with shirts and shoes and everything? I'm trying to picture a jar bubbling away next to your sneakers and some old hoodies. That's just wild to me but I guess it works if the taste sorted itself out.

Three weeks in my hall closet before I moved it. Dark corner behind some old coats, temp stayed steady around 68 degrees. Smelled like yeast for a bit but the taste came out clean after aging. Closet brewing works fine if you don't mind rummaging past a fermenter for your winter jacket.
