Am I the only one who sees a huge difference in knife skills after 3 months of daily practice?

Honestly I spent 20 years just sort of hacking away at stuff, then I forced myself to do 30 minutes of basic cuts every shift starting in January. Now my prep time is cut by a solid 40% and my line cooks are actually asking me what I changed. Has anyone else seen a jump that fast just from repetition?

Yeah the claw grip was a game changer for me too. Once I stopped worrying about nicking my fingers and just let the knife find its rhythm, everything clicked.

I had a buddy who practiced the claw grip for like two months straight, just cutting onions and potatoes every night before bed... he said his knife just started feeling like an extension of his hand out of nowhere.

@terryw67 makes it sound like a whole zen thing, lol. Two months of onions and potatoes every night? Seems like a lot of work for chopping veggies, but hey whatever works.
