Dropped $220 on a used 8-quart pressure cooker for the line and it turned out to be the best money I ever spent
Bought it off a retired caterer in Queens back in 2019, thinking it would just save time on stocks and braises. Turned out it cut our veal demiglace from 10 hours to 3 and a half, and we started using it for everything from rice to pulled pork when the steam table broke. Now I am wondering, what is the one piece of gear in your kitchen that paid for itself in a month but you never saw coming?
