Finally caved and bought a $300 immersion circulator for the kitchen. It felt like a splurge, but after nailing 63 perfect medium-rare steaks for a wedding party last weekend, I'm calling it a win.

Damn, that's a solid win. @nancycooper is right, that's a crazy first test. Totally worth the splurge then.

Perfect medium-rare steaks for a wedding party" is a pretty high-stakes first test. Mine mostly just reheats leftovers. Sounds like it earned its keep, though.

Yeah that's the real test right there. If it can handle a crowd without overcooking the first steaks, you're golden. I'd do a dry run with cheaper cuts first though, maybe some thick pork chops. Lets you figure out hot spots without risking fifty bucks worth of meat.
