Hit 200 covers solo on a Saturday night and I still feel wrecked

Last Saturday we got slammed out of nowhere, a double booking and a walk-in party of 12 all hit at once. I was working the line alone because my sous called in sick, and somehow I pumped out 200 plates between 6 and 10 PM. My knife hand is still cramping up two days later. Has anyone else hit a crazy number like that and just felt totally numb after?

Did the 12-top order a bunch of steaks or something that took forever, or was it mostly pastas and apps that flew out fast?

@the_elizabeth you nailed it with that "flew out fast" line. The 12-top mostly ordered apps and pasta dishes, so the food came out super quick. But one guy sent back his carbonara twice for being too salty, that stalled the whole thing. Steaks would have been a nightmare though, glad they skipped those.

Makes you wonder why people think sending something back twice will somehow change the cook's recipe.

man, "too salty" twice? that's brutal... i can't believe someone sent back carbonara twice and still didn't just eat it. like, it's pasta, not a science experiment. i would've been fuming if i was the cook and saw that ticket coming back again.
