Is mise en place really non-negotiable or is it just a crutch? Heard a line cook say something that got me thinking

So last Saturday I was working the pass at a friend's pop-up in Portland, and one of the younger line cooks, maybe 22, says to me, "Mise en place is just for people who can't think on their feet." I nearly dropped the pan I was holding. I've been doing this 15 years and I was raised on the whole "clean station, clear mind" thing. But then I watched him work. His station was a disaster, bowls everywhere, but he was fast. Like, scary fast. He'd grab a pinch of salt without looking, adjust heat by feel, and his plates came out consistent. Every time. I asked him about it after service and he said he tried mise for a month and he kept losing his rhythm because he was spending too much time organizing instead of cooking. He said "the chaos IS my system." Now I'm split. On one hand, I've seen so many people crash on a busy Friday because they didn't prep. On the other, this dude clearly isn't just being lazy. He's got some weird mental map going on. So what's the real deal here? For those of you who've been around a while, have you ever seen someone thrive with zero mise? Or is this just a young guy who's gonna hit a brick wall the first time he gets slammed with a 40 ticket night? Has anyone else dealt with a coworker like this and did it hold up long term?

Laugh at myself here because I spent my first two years in kitchens convinced my mise was a personality trait, not a tool. Honestly, I've seen enough cooks with stations that look like a dumpster fire who still crush service to know that the guy isn't just making excuses. But I've also seen that same type get absolutely buried on a holiday rush and start grabbing the wrong salt or burning things because their "system" fell apart under real pressure. Tbh, I think the real test isn't whether you use mise, it's whether your way keeps working when the tickets stack up and the night goes sideways. If his chaos truly holds up on a 40 ticket night, then more power to him, but I'd still bet on the guy who has a place for everything when the shit hits the fan.
