Line cook at my old spot said "the ticket rail is just a suggestion" and I can't stop chewing on it
He was joking about our Friday rush where we'd fire 40 covers in 20 minutes off a printer that jammed every third ticket, but I keep thinking he was really saying we stopped reading plates and just cooked the queue, so how do you all keep the rail from running your kitchen instead of the other way around?
