Lost an hour trying to fix a broken emulsion last Tuesday

Tbh I was making a vinaigrette for a big catering order and it split on me. Took me a full hour of whisking in ice water to bring it back together, felt like such a rookie moment. Has anyone else dealt with an emulsion that just refused to cooperate?

Ice water is the old reliable trick but sometimes even that fails. I've had to start over from scratch more times than I want to admit. The worst is when you think you've fixed it and it breaks again two minutes later. At that point I just pour it down the drain and try not to cry over wasted olive oil.

Read that adding a drop of mustard before whisking helps stabilize it.
